OUTBACK ICECREAM CAKE

Kate served me Icecream Cake on her property out of Katherine, near Nitmiluk Gorge. It was her friend’s birthday and all guests were to join in the celebrations atop a mountain ridge, one sunset in July. We saw a jabiru cruise on past. She said it was the first they’d seen since living there. We licked the drips of cake between our fingers as she topped my plastic pink cup with heady chardonnay.
